Cut & Come Again Cake

This was one of my mum's favourite cakes. Easy to make and I promise, it is absolutely delicious!

 

 

Ingredients
110g Margarine
110g Caster Sugar
1 Medium Egg - beaten
225g Self Raising Fluor
½ Teaspoon Salt
1 Teaspoon Mixed Spice
115ml Milk
250g Mixed Dried Fruit
1 Desert Spoon of Orange Marmalade

 

Method
1.    Grease and then line a 2lb Loaf Tin
2.    Pre Heat oven to 170oC
3.    In a food mixer, beat Margarine & Castor sugar until light 
       and fluffy
4.    Beat in the Egg
5.    Sift Fluor & Spices into bowl, add the milk and beat until smooth
6.    Remove bowl from machine and with a spoon mix in the fruit and marmalade thoroughly
7.    Pour mixture into Loaf Tin and level using back of the  spoon. Get right into the corners!
8.    Bake in the over for 1¼ to 1½ hours or until skewer comesout clean.
9.    Allow to cool in the tin

    

Make a cup of tea or coffee and sit down and enjoy - you’ve             earned it!
